We had packed our bags and were ready for the little vacation to an island resort in the placid backwaters of Poovar the next day. It being a long train journey to the place, my mother in law and I were making a list of all the foodstuff we needed to carry. We were travelling in a big group, 10 of us. We Indians are fond of food and packing up for a picnic. And so, although munchies are available on trains and at stations through the journey, we love to carry homemade stuff too.
While my MIL took care of the ‘food’, I was in charge of the snacks. I packed in a couple of packets of chips and was planning to step out to buy some biscuits when it struck me that I’d not baked anything for my little 4-year old nephew in a really long time. And so, I baked a nice big batch of these cute, bite-sized chocolate cookies. These can be made with whole wheat alone. I added some maida (APF) since I did not have the required quantity of wheat. I have a set of 10 tiny cookie shapes and made seven dozen cookies (about 15-20 regular sized ones)! I was glad I baked them that day, because I realised these would work for the chocolate theme I need to blog about for Valli’s Blogging Marathon.
On the train, when my hubby handed out the packet of biscuits to the li’l fellow, telling him that I’d baked these ‘homemade’ cookies especially for him, he gleefully dug right in. Later, when I asked him if he knew what ‘homemade’ cookies meant, he confidently shot back: “Of course! Chocolate cookies!”
Wholewheat Nutella Cocoa Cookies
Ingredients:
Whole wheat – 3/4 cup
APF – 1/4 cup
Nutella – 1/4 cup
Butter (melted) – scant 1/4 cup
Cocoa powder – 2 tbsp (heaped)
Baking powder – 1 big pinch
Baking soda – 1 big pinch
Sugar (powdered) – 1/2 cup
Method:
Preheat oven to 175deg C
Sift both flours, cocoa, baking powder and soda together
Add sugar and mix well
Add butter and mix well
Add nutella and mix well. You should get a dough that is soft and pliable
Take a quarter of the dough and pat it down with the heel of your palm to desired thickness (mine was about 1/4 cm)
Cut into desired shapes and place on baking tray
Bake in preheated oven for about 18 mins
