Ullutham poornam aval/Urad Dal Poha/Beaten Rice with Black Gram Crumble

My mother has her unique style of preparing north-Indian-south-Indian fusion food. She often cooks typically north-Indian vegetables in south-Indian style, or vice-versa. She prepares dalia (broken wheat/lapsi) with adai maavu (a kind of dosa batter prepared with dals), she adds a mix of whole moong (whole green gram) and masoor dal (red gram lentil) to the typically Tamil style poricha kootu, that is normally prepared with just moong dal (split green gram).

I love her poha (beaten rice). Recently, when I’d been visiting my parents, she gave this ubiquitous Maharashtrian breakfast item (it is somewhat like this) an interesting twist by pairing it with steamed crumbled black gram (ullutham poornam or usli).

The manner of preparing the poornam or usli with the black gram is similar as that done with split pigeon peas (toor dal/thuvaram paruppu), called Paruppu Usli. My ma’s poha with ulutham poornam tasted wonderful, and the flavor combination was very different indeed. it’s my ma’s birthday today and i’m glad i have one of her dishes ready for a post today. Happy Birthday ma!!

Ullutham poornam Aval/ Urad Dal Poha/Beaten Rice with Black Gram Crumble

Ingredients:

Poha (thick variety) – 2 cups

Urad dal/split black gram/ullutham paruppu (akin removed) – 1 cup

Dry red chilies – 4-6

Asafoetida – a big pinch

Mustard seeds – ¼ tsp

Oil – 3 tsp

Curry leaves – a few

Salt

Method:

Soak black gram with 3-4 chilies for 30 mins

Drain water and grind with minimal water and salt to taste into a coarse batter (for a rough visual guide to how it should look at this stage, see here. The pictures in the link is a similar paste prepared with another lentil – the yellow split pigeon pea)

Steam the batter for around 15 mins

Crumble with your hands once cool

Wash poha in several changes of water and drain in a colander. Let it rest for 15 mins

Heat oil in a pan and add mustard seeds and asafoetida

Add 1-2 red chilies (halved)

Add crumbled lentil once chilies turn bright red. Be careful since dry red chilies char very quickly

Sauté the lentil for 10 mins or so till it looks well cooked

  2. Hey I made this for lunch today, made a few changes though, added onions, green chillies, ginger , grated carrots , peas along with tadka and then added the steamed urad and the poha. It was delicious, but i could not feel the distinct urad flavor…maybe bcoz of the veggies that i added. but needless to say, it was a satisfying and wholesome meal with proteins and carbs and vitamins. tell you mom i said danq

    • Hi Bindu! Am glad you made this. Yes, the veggies, especially the onions, must have drowned out the urad dal flavour. But hey, thanks for trying it out with this way. Now, I’m waiting to try your variation!
