Cookie – the word never fails to remind me of the cartoon character Dexter and his sis DeeDee. We started getting Cartoon Network on our cable when my bro was a lil 4-year old. Thanks to the channel, he had an amazing English vocabulary by the time he was in nursery. Dexter – a child prodigy, a scientist at the age of 5 or so, whose brilliance is hidden to the rest of the world except DeeDee — was his absolute favourite.
Now DeeDee, as is the case with most siblings, often irritates her bro and Dexter has to bribe his way out with cookies, for which DeeDee has a major weakness. The typical sequence of events, Dexter holding out a cookie and DeeDee running up to get it, almost like an excited puppy, is so fresh in my mind.
I thought of Dexter and my 4-year-old bro watching the cartoon programme intently while offering these Peach and Orange Zest Cookies to him this afternoon and felt a narration of the cartoon character and his sis would make a good intro for a blog post being prepared for a blogging event with kid- friendly dishes.
As for the cookies, they were nice and crunchy on the outside and somewhat chewy inside due to the fruits. Not everyone at home relished the flavour of orange zest in the cookies, so, you could grate it instead of fine-chopping like I did and go easy on the quantity if your folks or kids aren’t big fans of orange zest.
Peach & Orange Zest Cookies
(Makes 15 small cookies)
Ingredients:
Maida/APF – ½ cup
Whole wheat flour – 1/8 cup
Butter (melted) – 2 tbsp
Oil – 1 tbsp
Powdered sugar – 3 tbsp
Salt – a pinch
Baking powder – ½ tsp
Peach – 1 (pitted and finely chopped)
Orange zest (grated/chopped fine) – 1 tbsp
Method:
Mix maida/APF and whole wheat flour thoroughly
Add baking powder, salt and sugar and mix well
Add orange zest and chopped peach and fig
Add butter and oil and mix everything well
The dough will be somewhat crumbly but will come together when you try to try to make small balls
Preheat oven to 170 deg C
Roll out teaspoon sized balls and pat them out like regular cookies
Bake in the preheated oven for 20-25 mins (it took me 22 mins in my oven)
Remove from oven and cool
NOTE: These cookies harden slightly on cooling
